This was a great way to use a whole chicken that we cut into pieces and just used all the pieces in the recipe.
Ingredients:
1 chicken 3-4lbs
1/2 tsp salt
1/4 tsp pepper
2 tbsp butter
1/2 c onion diced
1/2 diced celery
1 can whole berry cranberry sauce
1 cup bottles barbecue sauce
Directions:
Sprinkle chicken with salt and pepper; brown in a skillet in butter. Remove the chicken to greased 13 x 9 pan. In the drippings, saute onion and celery until tender. Add cranberry sauce and barbecue sauce; mix well. Pour over chicken. Bake, uncovered at 350 degrees for 1 1/2 hours basting every 15 minutes. THE BASTING IS VERY IMPORTANT TO PREVENT BURNING.
